Stuffed Golden Acorn Squash

0.25  cup  Extra Virgin Olive Oil  
1  cup  Mirepoix  
1  pound  Lean Ground Turkey  
3  cup  Seasoned Stuffing Cubes  
1.5  cup  Chicken broth  
1  pinch  Kosher Salt  
1  pinch  fresh cracked black pepper  


Preheat oven to 375 degrees. Using a chef knife, carefully remove 1/4-inch from the squash to stabilize it. Cut the top off the acorn squash, set aside. Scoop out the seeds and stringy fibers of the squash. Place the hallowed out squash into the Copper Chef. Meanwhile, in a Copper Skillet, sauté the mirepoix in the olive oil until it begins to caramelize, about 5 minutes. Add the ground turkey. Use the back of a wooden spoon to break up the turkey; cook for 5 minutes. Season generously with salt and pepper. Add the stuffing cubes and chicken broth, and stir until the broth has been absorbed. Fill the cavities of the squash with the filling, gently packing it in. Cover with the top of the squash. Cook until tender, about 1 hour, 15 minutes.
